All my DC / DC converter have no housing. I can see the electronics. Most have a LM2596S from Texas Instruments. But there are certainly fakes ...

All I can say it to test carefully before attaching to your expensive camera. 

Your LM2596S chips could be fake (google for fake electronic chips) or more likely "off spec" units that failed quality testing but still appear to work at room temperature and lower current draws.

Also, cheap electrolytic capacitors are common.  They don't actually meet the specs of the good ones but they appear to work - at least for a while.

I always had the experience, that the price for an adapter and an adapter + powers supply was not very big (around €6,-). Then you have something, which should work together. And then you had an additional connector to play with.
I can add a JST connector to the PSU I have and still connect that to the S110.
I did just that and both the PSU and the powerbank did not allow me to turn on the S110 using the DC30 battery.
I ordered another DC30 to be sure and that did change the situation:
Somehow the plug goes deeper into the DC30 and I could power on the S110.

Does this mean it works if you push the plug farther into the DC30 when it's installed in your S110?

Indeed!
So this all comes down to mechanical tolerances.  The battery door cover of your S110 is thicker than the door cover of your other cameras.   Time to get out a razor blade or dremel tool and carefully grind down the plastic on the plug by a few mm ?
