I am looking for an older generation camera I can modify and remove the Bayer layer. I also want to disassemble the lens and remove the focus motor and glass so I can permanently mount it into a telescope eyepiece.

Which old generation camera would be a suitable doner? I can get ones with a broken screen for cheap and plan on them being USB controlled anyways.

Will live view even work with a debayer sensor or will the camera's processor just freak out?

Not having done this myself I'm not going to recommend specific models, but a few people have done similar projects:

Models without image stabilization will likely be easier to deal with.
Some people have removed the lens from the sensor, but left everything connected so the camera still thinks it's there.

I'm not aware of anyone reporting doing this (edit: on CHDK cameras), but I would expect live view to continue to work. People have successfully removed the IR cut filters.
