after shooting a series of images from a time lapse, what software is generally used to convert them to a avi file?

e.g. with Virtualdub (Open source, no installation needed)

- Use the "File" - "Open video" menu entry, set "File type" to 'Image sequence'
- point to the folder with the jpegs & select the first of the series

- in the "Video" menu you can setup the "Frame Rate..." ('Convert to fps: 25') and the compression settings / codec
- save the video with "File" - "Save as avi..."

I use a very simple software, but it works great. you can choose the number of frame per second and the output format, ranging from uncompressed to divx.  It is called "NDW jpeg video", give it a try!
Here is the link

I use QuickTime Pro. I think it cost about 10 GBP to upgrade from standard QuickTime. Very easy to use.
