I have read in reviews that some people are concerned about the LEDs on top of the camera drawing attention.

This leads me to the idea of a "stealth mode" menu option that can be used to turn off the LEDs on top of the camera. Might be good for drawing less attention to yourself if you're trying to remain inconspicuous. I believe I read that there are controller commands for these LEDs in the firmware, so this might be possible. Maybe this can also include turning off all sounds and the LCD screen for when you're taking photos at night.

I have been thinking of something like that as well, but regarding the AF Assist Beam.

It would be nice to be able to turn off the flashing of the AF Assist Beam when using the self-timer. Maybe this could be included in any "Stealth Mode" option as well.

The default Canon firmware allows you to turn off the AF Assist Beam.  See p. 56 of the User Guide:

The default Canon firmware allows you to turn off the AF Assist Beam. 

That option only allows to deactivate the beam while focusing i.e. pressing the shutter halfway down.

If the drive mode is set to self-timer, the beam is flashing regardless of what I choose in the menu (SX110).
