Well, I was thinking that the most useful (most used) features of CHDK are the overrides and RAW support.
Many cameras lack those features, so that's why most people are using CHDK. On the other hand, you need to navigate through 2 menus in order to access them.
So my proposal is to have the following menu by default:

Shutter speed (left/right keys change the speed).
Iso
Aperture
Manual Focus
Raw support (CRW, DNG, OFF)
Advanced (takes you to the current main menu).

This could be enabled only on cameras that lack manual control over stuff.

Well, I found the user menu, and was able to enable it and make it the root menu, but how do you populate it?

how about the jogdial/feather thingy, can't you use that instead of up/down ?
works fine scrolling menus on my ixus870 / sd880
that would enable you at least to have a 'unique' display button ...

Well, I can do that temporarily because I am working at the camera port, so I know where stuff in the source code is. But I actually like the up/down button more than the jogdial, and I wouldn't want to sacrifice the up/down buttons just for this purpose.

Anyway, the user menu is just a partial answer to my suggestion, but doesn't do everything. For example, the overrides and factor menus must still be accessed individually.
My idea was to be able to also turn the override on/off in the menu. For example, for the shutter speed, you would have: [...]4,2,1,off,1/2,1/4,1/8[...]
Same thing with the RAW, dng, crw, off.

You could remap DISP to  long down.  How does the Canon camera itself differenciate the two?  Is the down a disp only in certain cases?

There are shortcuts for many of these things. RTFM or RTFC before requesting features maybe ?
Don't forget what the H stands for.
