I also have an S2 IS and my observation regarding override features are:

aperture override: no effect when I choose values higher than f/8 (tested on short and long zoom)

iso override: i have the same behaviour like on tschens camera. Values higher than iso400 have no effect. But to be serious, ISO400 is noisy enough on the S2 IS. I don't think i would use higher ISO.

Overriding ISO with smaller values than ISO50 works perfectly well for me. At least ISO25 seems to have the expected effect (image is darker)

On my S2 IS I've checked and rechecked with the last 10 or so Allbest builds and TV, AV or ISO override won't work as advertised :P
spocket is right, lower iso is attainable but higher ISO not.
The behavior is as follows:
- select AUTO,P,M,Av or Tv as modes, they work mostly the same
- if other then Auto then I've set ISO to 400
- any override produces the same exposure as with the highest camera settings
- half-pressing the first time before the shot shows a preview with highest camera settings
- if after the pic is taken shutter is maintained half-depressed then a preview with overridden settings is visible
- fully depressing the button from this point takes a pic at highest camera settings
- keeping the button pressed after the pic is taken shows that the picture is lighter than it should be
- turning on high-speed continuous mode means that camera will take pictures on its highest settings

As a conclusion, it seems that my camera ignores the overridden settings, except when previewing at half-press.

I'm running the F version of the S2IS firmware.
