Is it possible using CHDK to set a camera to take a photograph in a square format or 1:1 ratio?
I'm using a Canon G7.

No. But lossless JPEG cropping is possible on any PC.

In theory you could write RAW/DNG this way by modifying CHDK C source code, but that doesn't make much sense either as the only(?) reason to do this in-cam (direct printing) couldn't be used.

I guess what I wanted was to be able to frame an image as a square on the viewfinder (without using a piece of tape as a mask) and also end up with a square image.
I know some digital cameras have an aspect ratio 1:1 - square format mode, eg, Ricoh GrIII.

No problem, use a mask, see second one down here : http://stereo.jpn.org/eng/sdm/grids.htm

CHDK also has masks.
