Is it possible to do both of these on one camera (concurrently)?
1) view whats in the camera's lcd on a monitor or computer screen...and
2) trigger a picture using a USB or other remote (not necessarily wireless)

Sure is. Take a look at this page http://arch.ced.berkeley.edu/kap/discuss/comments.php?DiscussionID=2181&page=2#Item_43 (and scroll back to page 1 too). You'll note that some newer Canons use the same socket for both USB and video out, which means you need to make or buy a special cable that plugs into the camera and has both USB and video plugs on the 'other ends'.

Quite a few Kite Aerial Photographers have a video downlink so they can see what the camera is pointing at as well as a radio-control to click the shutter via the USB port.

Doing all this via a PC is slightly more difficult - you need to look at the PTPGui stuff here.
