The Exif written into the DNGs is by no means complete. The Canon Exif is created later (not available at the time CHDK creates the DNG), and it can contain some data that is more accurate.

But compared to having no EXIF information, the DNG is pretty good. Do you have a list of what does not get recorded or is inaccurate ?
