It would be possible, even easy.

In gui.c, just replace
    static const char* modes[]={ "Off", "1/3 EV","2/3 EV", "1 EV", "1 1/3Ev", "1 2/3Ev", "2 Ev"};
with
    static const char* modes[]={ "Off", "1/3 EV","2/3 EV", "1 EV", "1 1/3Ev", "1 2/3Ev", "2 Ev", "2 1/3Ev", "2 2/3Ev", "3 Ev", "3 1/3Ev", "3 2/3Ev", "4 Ev"};
just after
const char* gui_tv_bracket_values_enum(int change, int arg) {
and
const char* gui_av_bracket_values_enum(int change, int arg) {

How to shoot ouside the -2/+2 EV range:

1. Set CHDK Av/Tv bracketing step to desired value (I use 2EV) and +/- mode
2. Go to Av or Tv mode
3. Press SET, go to Drive Mode, select Custom, press MENU
4. Enter 0 or 1 second delay, and the desired number of brackets (I choose 3)
5. Press the shutter!

It's so easy and lazy... you can have up to 10 frames shot this way, really fast, with a single button push, a single focus plane and a single metering. 5 frames up and 5 frames down means -10EV/+10EV. Need more?!

BTW, -10/+10 is painful and stupid, don't try it with long exposure times for the initial bracket :D
