A new wikia page suggestion: http://chdk.wikia.com/wiki/User:Nafraf/hardware
It is a list of hardware (IC) of each camera, it is not complete.

Audio IC were identified searching for string AudioIC_ in fw dump string.
Touch panel was identified in special ports with touch screen interfaces.
Any suggestion of columns to add or delete?

This is good information - nice to see you pulling it together.   Don't hold your breath waiting for a flood of contributions though,  its a pretty specialized interest and the active CHDK community is not that big (as you know).

You can probably extract some additional hardware information from the dumps.
I remember that I have seen at least the manufacturer of the flash memory (AmdCommand.c for example) in debugassert calls. You can find these by following the flash-related event procedures (WriteToROM, EraseSectorOfROM).
There's also an event procedure, which - in most cases - has some information about some mecha-related parts: ShowMechaMacro. You may want to format those strings a bit: for example OPTICAL_EC175 could be EC175, and not all information is in string form (the eventproc writes formatted strings).

edit:
This site has additional hardware information.

Well, using STICK will also be complicated for those who don't have a supported camera. That page will need some cleanup (it could be replaced by a short list of easy-to-use methods, the long explanations and manual methods could be moved onto a separate page)...
The page predates STICK and as you might guess,  took a lot of work just to get it into the state it's in.  It might be long and complex, but at least it's correct.  There was no comprehensive page with accurate information prior to it's creation.

As far as simple methods go,  it's basically either STICK or formatting in your camera using CHDK menus after a firmware update boot ?
The other GUI tools (EOSCard, MacBoot) also belong there. First time users may not find the respective CHDK menu entry easily. And there are those cams without "firmware update" support.

Those utilities are good but they only address setting up the boot sector correctly for CHDK autobooting.   Partitioning ( FAT16, FAT32, exFAT, single partition, dual partition ??),  downloading the correct source,  unzipping correctly, copying files to the right folders / partitions are all left to the end user.

So that just leaves STICK.   And even that assumes the user is not frightened of Java apps.

Note that for new test & development versions there is this : http://www.zenoshrdlu.com/stick/stickx.html

I'll guess I'll add an info box to the Prepare Your SD Card page for people working with test builds that points them to that page.   More bloat ....
