Do I need to force the focus to infinity?
If so: which of the Canon menu settings do I need to turn off to make the Subject Distance override work?
Turning Continuous AF off is not enough...
Your camera has native Canon manual focus, you don't need to use the Subject Distance overrides. ;)

OK... So how to act in the case of night sky photography?
I can zoom in/out, but how to adjust focus? (all I know it is all automagic)

Three choices :
1) Use the set_focus() command in a script.
2) Use the SD override menu option in the CHDK Override menu
3) Use the Canon buttons to set the camera into MF mode and adjust the focus to infinity.
